Ingredients

  • 1/8 cup fresh or frozen blackberries
  • 1 tablespoon sugar (or Monkfruit sweetener)
  • 1/8 cup water
  • 1 mint leaf
  • 1/2 lime
  • Club soda
  • Ice

Instructions

  1. In a small saucepan, combine the blackberries, sugar, and water. Bring to a boil and then simmer for 10 minutes.
  2. Remove from heat and let the mixture cool to room temperature.
  3. Pour the blackberry simple syrup through a fine mesh strainer and into a glass container.
  4. To make one drink, pour 3 tablespoons of the blackberry simple syrup into the bottom of a shaker.
  5. Add the juice of 1/2 a lime and a mint leaf to the shaker and muddle the mixture together.
  6. Add a handful of ice to the shaker and shake the mix.
  7. Fill a highball glass with ice and pour the contents of the shaker in.
  8. Top with club soda and enjoy!
