Ingredients
- 1/4 cup fresh or frozen blackberries
- 1 tablespoon sugar (or Monkfruit sweetener)
- 1/4 cup water
- 1 mint leaf
- Juice of 1/2 lime
- Club soda
- Ice
Instructions
- In a small saucepan, combine the blackberries, sugar (or sweetener), and water. Bring to a boil and then simmer for 10 minutes.
- Remove the mixture from heat and let it cool to room temperature.
- Pour the blackberry syrup through a fine mesh strainer into a glass container.
- For one serving, pour 3 tablespoons of the blackberry simple syrup into the bottom of a shaker.
- Add in the juice of 1/2 a lime and a mint leaf, then muddle them together.
- Add a handful of ice to the shaker and give the mix a shake or two.
- Fill a highball glass with ice and pour the contents of the shaker into the glass.
- Top with club soda and enjoy!
