Ingredients

  • 1/4 cup fresh or frozen blackberries
  • 1 tablespoon sugar (or Monkfruit sweetener)
  • 1/4 cup water
  • 1 mint leaf
  • Juice of 1/2 lime
  • Club soda
  • Ice

Instructions

  1. In a small saucepan, combine the blackberries, sugar (or sweetener), and water. Bring to a boil and then simmer for 10 minutes.
  2. Remove the mixture from heat and let it cool to room temperature.
  3. Pour the blackberry syrup through a fine mesh strainer into a glass container.
  4. For one serving, pour 3 tablespoons of the blackberry simple syrup into the bottom of a shaker.
  5. Add in the juice of 1/2 a lime and a mint leaf, then muddle them together.
  6. Add a handful of ice to the shaker and give the mix a shake or two.
  7. Fill a highball glass with ice and pour the contents of the shaker into the glass.
  8. Top with club soda and enjoy!
