Ingredients
- 1/4 cup fresh or frozen blackberries
- 3 tablespoons sugar (or Monkfruit sweetener)
- 1/4 cup water
- 1 lime
- 1 sprig of mint
- Club soda
- Ice
Instructions
- In a small saucepan, combine the blackberries, sugar, and water. Bring to a boil then simmer for 10 minutes.
- Remove from heat and let the mixture cool to room temperature.
- Pour the blackberry syrup through a fine mesh strainer into a glass container. Store in the fridge for a couple of days if desired.
- To make one drink, pour 3 tablespoons of the blackberry simple syrup into the bottom of a shaker. Add in the juice of 1/2 a lime and a mint leaf. Muddle the mixture together.
- Add a handful of ice to the shaker and give the mix a shake.
- Fill a high ball glass with ice and pour the contents of the shaker in.
- Top with club soda and enjoy!
