  • 1 tbsp blanched almonds (skins removed)
  • 1 cup milk
  • 1/4 cup sugar
  • 1/8 tsp ground cinnamon
  • 2 egg yolks
  • 2 tbsp premium rum


  1. In a food processor, process the almonds into a paste.
  2. In a heavy-bottomed saucepan, simmer the milk, sugar, and cinnamon until the sugar dissolves and the milk is heated through. Avoid boiling. Remove from heat and let it sit for 30 minutes.
  3. Whisk the almond paste into the milk mixture.
  4. Beat the egg yolks until creamy, then slowly add the milk mixture, stirring continuously until fully combined.
  5. Return the pan to the stove and cook the mixture over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, for about 8 to 10 minutes.
  6. Allow the rompope to cool completely. Add the rum and stir before serving.
