Ingredients
- 1/2 cup whole milk
- 3 tablespoons heavy cream
- 1 cinnamon stick
- Pinch of ground cinnamon
- Pinch of ground cloves
- 1 star anise
- 1/2 teaspoon vanilla extract
- Dash of freshly grated nutmeg
- 2 tablespoons sugar
- 1 egg yolk
- 2 tablespoons brandy
- 1/2 tablespoon dark rum
- Whipped Cream
- 2 tablespoons heavy cream
- 1 teaspoon powdered sugar
- Dash of vanilla extract
Instructions
- In a saucepan, combine the milk, cream, cinnamon stick, ground cinnamon, ground cloves, star anise, vanilla extract, and half of the nutmeg. Simmer gently, then let it steep for 30 minutes.
- Reheat the milk mixture. In a bowl, whisk together the egg yolk and sugar until thick and pale.
- Gradually add a small amount of the warm milk to the egg mixture, whisking constantly. Repeat a few times to temper the eggs.
- Whisk the egg mixture into the remaining milk and cook over medium heat until barely thickened.
- Remove from the heat, stir in the brandy, rum, and remaining nutmeg. Strain the eggnog and refrigerate until cold.
- In a separate bowl, whisk the cream, powdered sugar, and vanilla until thick. Top the eggnog with the whipped cream and a sprinkle of nutmeg.
