  • 1/2 cup whole milk
  • 3 tablespoons heavy cream
  • 1 cinnamon stick
  • Pinch of ground cinnamon
  • Pinch of ground cloves
  • 1 star anise
  • 1/2 teaspoon vanilla extract
  • Dash of freshly grated nutmeg
  • 2 tablespoons sugar
  • 1 egg yolk
  • 2 tablespoons brandy
  • 1/2 tablespoon dark rum
  • Whipped Cream
  • 2 tablespoons heavy cream
  • 1 teaspoon powdered sugar
  • Dash of vanilla extract


  1. In a saucepan, combine the milk, cream, cinnamon stick, ground cinnamon, ground cloves, star anise, vanilla extract, and half of the nutmeg. Simmer gently, then let it steep for 30 minutes.
  2. Reheat the milk mixture. In a bowl, whisk together the egg yolk and sugar until thick and pale.
  3. Gradually add a small amount of the warm milk to the egg mixture, whisking constantly. Repeat a few times to temper the eggs.
  4. Whisk the egg mixture into the remaining milk and cook over medium heat until barely thickened.
  5. Remove from the heat, stir in the brandy, rum, and remaining nutmeg. Strain the eggnog and refrigerate until cold.
  6. In a separate bowl, whisk the cream, powdered sugar, and vanilla until thick. Top the eggnog with the whipped cream and a sprinkle of nutmeg.
