Ingredients

  • 1 tablespoon water
  • 1 tablespoon lavender leaves
  • 3/4 cup apple cider vinegar
  • 1 cup blackberries, halved
  • 1 cup sugar
  • 2 ounces apple brandy
  • 1/2 ounce dry vermouth
  • 4 ounces blackberry lavender shrub
  • 1/2 ounce simple syrup
  • 1/4 ounce freshly squeezed lemon juice

Instructions

  1. For the Shrub
  2. In an airtight container or jar, combine blackberries, sugar, and lavender leaves.
  3. Mash the mixture until the berries are fully broken down and the sugar forms a thick paste.
  4. Add water and apple cider vinegar, stirring until the sugar is fully dissolved.
  5. Seal the container and place it in the fridge for 2 days.
  6. After 2 days, taste the shrub and adjust the vinegar and sugar to your preference.
  7. Strain the mixture through a mesh strainer, discarding the berries and lavender leaves, and retaining the liquid.
  8. Pour the liquid into a clean sealed container and store it in the fridge for up to 3 weeks.
  9. For the Cocktail
  10. Add the apple brandy, dry vermouth, blackberry lavender shrub, simple syrup, and freshly squeezed lemon juice to a shaker.
  11. Fill the shaker with ice.
  12. Shake the ingredients until chilled.
  13. Strain the cocktail into a coupe glass.
