Ingredients
- 1 cup whole milk
- 1/2 cup heavy cream
- 3 egg yolks
- 1 tbsp sugar, plus extra for egg whites
- 2 oz bourbon
- 1 tsp vanilla extract
- freshly grated nutmeg, plus more for garnish
- 2 egg whites
- Whipped cream, for serving
Instructions
- Preheat the Traeger grill to 180°F and use Super Smoke if available.
- Smoke the milk and cream in a baking dish on the Traeger for 60 minutes.
- In a stand mixer, beat the egg yolks with 1 tablespoon of sugar until light in color.
- Add the smoked milk and cream, bourbon, vanilla, and nutmeg into the egg mixture and stir to combine.
- In the stand mixer, beat the egg whites with sugar until stiff peaks form.
- Gently fold the egg whites into the cream mixture and whisk to thoroughly combine.
- Chill the eggnog for a couple of hours to let the flavors meld.
- Garnish with a dash of nutmeg and whipped cream. Enjoy!
