Ingredients

  • 8 fresh mint leaves
  • 1/2 lime, cut into wheels
  • 2 teaspoons lime simple syrup (or plain)
  • 3 oz coconut rum (or regular white rum)
  • 1 oz cream of coconut
  • 3 oz club soda
  • Extra lime juice, to taste
  • 1 lime wheel (for garnish)
  • 1 sprig of mint (for garnish)
  • 1 tsp flaked coconut (for garnish)

Instructions

  1. In a tall glass, muddle together the mint leaves and lime wheels to release the flavors.
  2. Fill the glass halfway with ice over the muddled ingredients.
  3. In a cocktail shaker filled with ice, combine the simple syrup, coconut rum, and cream of coconut. Shake for 20 seconds, then strain into the glass.
  4. Top off the drink with club soda and stir gently. Adjust the taste with a squeeze of fresh lime juice, if desired.
  5. Garnish with a lime wheel, a sprig of mint, and a sprinkle of coconut flakes on top.
