Ingredients
- 8 fresh mint leaves
- 1/2 lime, cut into wheels
- 2 teaspoons lime simple syrup (or plain)
- 3 oz coconut rum (or regular white rum)
- 1 oz cream of coconut
- 3 oz club soda
- Extra lime juice, to taste
- 1 lime wheel (for garnish)
- 1 sprig of mint (for garnish)
- 1 tsp flaked coconut (for garnish)
Instructions
- In a tall glass, muddle together the mint leaves and lime wheels to release the flavors.
- Fill the glass halfway with ice over the muddled ingredients.
- In a cocktail shaker filled with ice, combine the simple syrup, coconut rum, and cream of coconut. Shake for 20 seconds, then strain into the glass.
- Top off the drink with club soda and stir gently. Adjust the taste with a squeeze of fresh lime juice, if desired.
