Coconut Rum Delight
A luscious coconut-based cocktail with rum, cinnamon, and condensed milk, perfect for festive celebrations.
Ingredients
- 1 coconut
- 3/4 to 1 bottle (750 ml) dark or light rum
- 1 (13 1/2 oz) can coconut milk
- 1 (15 oz) can cream of coconut
- 2.50 (12 oz) cans evaporated milk
- 2 large cinnamon sticks
- Ice cubes
- 1 (14 oz) can sweetened condensed milk
Instructions
- Preheat the oven to 350 degrees.
- Use an ice pick and a hammer to pierce two of the eyes of the coconut and strain the water through a sieve into a bowl.
- Bake the coconut for 15 minutes, then carefully remove and hit it with a hammer to break the shell, remove the flesh, and finely grate it.
- Combine the grated coconut with the reserved coconut water and rum in a large glass measuring cup.
- In a blender, mix coconut milk, cream of coconut, condensed milk, evaporated milk, and coconut rum mixture until combined.
- Pour the mixture into a pitcher, add the cinnamon sticks, and refrigerate for up to 2 days.
- Before serving, stir the mixture and serve over ice.
