A light and refreshing clarified milk punch with gin, Aperol, and a hint of absinthe, perfect for summer sipping.
Ingredients
- 2 oz gin
- 5 oz Aperol
- 0.25 oz absinthe
- 8 oz milk
- 1.50 oz lemon juice
- 0.75 oz simple syrup
- Grapefruit peel
Instructions
- In a mixing glass, combine gin, Aperol, absinthe, lemon juice, and simple syrup.
- Heat the milk in a pot to around 140 degrees, then remove from heat.
- Add the Aperol mixture to the warm milk and stir until the milk curdles.
- Line a strainer with cheesecloth and place it over a large container, with an empty container alongside.
- Pour the mixture into the cheesecloth-lined strainer until it's about three-quarters full. Let it strain for 10-15 seconds until the liquid becomes clear, then move the strainer over the second container quickly.
- Discard the solids in the strainer and repeat the straining process until the entire mixture is strained once.
- Repeat the process with the cloudy liquid to ensure the final mixture is clear.
- Pour 4 oz of the strained mixture into a lowball glass over ice, express a grapefruit peel over the top, and garnish with the grapefruit peel.
