Ingredients
- 2 large egg yolks
- 1.50 tbsp sugar
- 1 cup whole milk
- Pinch of coarse salt
- 2 tbsp heavy cream
- 1/2 oz bourbon
- 1/2 oz dark rum
- 1/4 oz cognac
- Freshly whipped cream, for serving
- Freshly grated nutmeg, for serving
Instructions
- In a medium heatproof bowl, whisk egg yolks and sugar until pale yellow and thick.
- Heat milk and salt in a saucepan until it almost simmers, then slowly pour it into the yolk mixture, whisking constantly.
- Pour the yolk mixture back into the saucepan and cook over medium heat until it thickens.
- Pour the mixture through a fine-mesh sieve into a large bowl and let it cool.
- Add cream, bourbon, rum, and cognac; cover and refrigerate overnight.
- Whisk remaining sugar and egg whites in a heatproof mixer bowl set over a pan of simmering water. Whisk until the sugar is dissolved and the mixture is warm.
- Remove from heat and beat until stiff peaks form.
- Fold the egg white mixture into the eggnog.
- Pour into glasses, top with whipped cream, and sprinkle with nutmeg.
