Ingredients

  • 2 large egg yolks
  • 1.50 tbsp sugar
  • 1 cup whole milk
  • Pinch of coarse salt
  • 2 tbsp heavy cream
  • 1/2 oz bourbon
  • 1/2 oz dark rum
  • 1/4 oz cognac
  • Freshly whipped cream, for serving
  • Freshly grated nutmeg, for serving

Instructions

  1. In a medium heatproof bowl, whisk egg yolks and sugar until pale yellow and thick.
  2. Heat milk and salt in a saucepan until it almost simmers, then slowly pour it into the yolk mixture, whisking constantly.
  3. Pour the yolk mixture back into the saucepan and cook over medium heat until it thickens.
  4. Pour the mixture through a fine-mesh sieve into a large bowl and let it cool.
  5. Add cream, bourbon, rum, and cognac; cover and refrigerate overnight.
  6. Whisk remaining sugar and egg whites in a heatproof mixer bowl set over a pan of simmering water. Whisk until the sugar is dissolved and the mixture is warm.
  7. Remove from heat and beat until stiff peaks form.
  8. Fold the egg white mixture into the eggnog.
  9. Pour into glasses, top with whipped cream, and sprinkle with nutmeg.
