Ingredients

  • 1 1/2 ounces blanco tequila
  • 1/2 ounce Combier
  • 1/2 ounce dry vermouth
  • 1 ounce pea puree (2 cups peas, 1 teaspoon verjus, pinch of sugar and salt, 1/4 cup water)
  • 3/4 ounce lime juice, freshly squeezed
  • Garnish: lime wheel

Instructions

  1. In a shaker with ice, combine blanco tequila, Combier, dry vermouth, pea puree, and freshly squeezed lime juice.
  2. Shake the mixture until well-chilled.
  3. Double-strain the cocktail into a rocks glass over fresh ice.
  4. Garnish with a lime wheel.
  5. To make the pea puree, blend 2 cups of peas (removed from their pods), 1 teaspoon verjus, a pinch of sugar, a pinch of salt, and 1/4 cup water until smooth, about 30 seconds.
