Ingredients
- 1 1/2 ounces blanco tequila
- 1/2 ounce Combier
- 1/2 ounce dry vermouth
- 1 ounce pea puree (2 cups peas, 1 teaspoon verjus, pinch of sugar and salt, 1/4 cup water)
- 3/4 ounce lime juice, freshly squeezed
- Garnish: lime wheel
Instructions
- In a shaker with ice, combine blanco tequila, Combier, dry vermouth, pea puree, and freshly squeezed lime juice.
- Shake the mixture until well-chilled.
- Double-strain the cocktail into a rocks glass over fresh ice.
- Garnish with a lime wheel.
- To make the pea puree, blend 2 cups of peas (removed from their pods), 1 teaspoon verjus, a pinch of sugar, a pinch of salt, and 1/4 cup water until smooth, about 30 seconds.
