Ingredients

  • 1 large egg (separated into yolk and white)
  • 2 tablespoons granulated sugar
  • 1/3 cup whole milk
  • 2 tablespoons heavy whipping cream
  • 1/8 to 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon vanilla extract
  • 1 to 1 1/2 oz bourbon (optional)

Instructions

  1. Separate the egg white from the yolk. Place the egg yolk in a medium mixing bowl and set the egg white aside for later use.
  2. Add sugar to the egg yolk and whisk vigorously until the mixture becomes pale yellow and fluffy. Set aside.
  3. In a medium saucepan, heat the milk, whipping cream, and 1/8 teaspoon freshly ground nutmeg over medium heat until it begins to steam, but before it boils.
  4. Remove from heat. Spoon one ladle full of the hot milk mixture and whisk it into the egg mixture to temper the eggs, then continue adding ladles of the hot milk until most have been added.
  5. Slowly drizzle the egg mixture back into the saucepan, whisking as you do so.
  6. Heat over medium, stirring constantly, until the mixture begins to thicken, but do not let it boil.
  7. Remove from heat and stir in the vanilla extract and bourbon (if using).
  8. Cover with plastic wrap and place in the refrigerator to cool for at least 1 hour.
  9. Serve with a sprinkle of freshly grated nutmeg.
