Ingredients

  • 1 1/2 cups full-fat milk
  • 1 large egg
  • 1 1/2 tablespoons golden caster sugar
  • 2 oz Bourbon, rum, or brandy
  • 2 oz whipped cream (optional)
  • Freshly grated nutmeg, to serve

Instructions

  1. Pour the milk into a non-stick saucepan and heat it until it's just below boiling point.
  2. In a large bowl, beat the eggs and sugar together until thoroughly combined.
  3. Pour half of the warm milk into the egg mixture and stir well, then return the entire mixture to the saucepan with the rest of the warm milk.
  4. Cook the mixture on low heat until it starts to thicken, ensuring it doesn't boil.
  5. Add the Bourbon, rum, or brandy and stir well.
  6. Pour the eggnog into heat-proof glasses and top with whipped cream, if desired.
  7. Grate plenty of fresh nutmeg over the top and serve immediately.
