Ingredients

  • 1/2 cup ripe, sweet, and preferably yellow plums, pitted and cut into chunks
  • 2-3 tablespoons organic cane sugar, to taste and depending on plum tartness
  • 6 oz. dry white wine, such as Riesling or Riesling Sylvaner
  • 1/4 - 1 oz. crème de cassis
  • Fresh herb sprigs, like lavender or mint, for garnish
  • Crushed ice, if desired

Instructions

  1. Cut the plums into chunks and combine them with the sugar in a large pitcher or bowl. Let the mixture sit for about 30 minutes for the plums to absorb the sugar.
  2. Pour in the white wine and mix well. Cover and chill overnight to allow the fruit to absorb the alcohol.
  3. The next evening, ladle the chilled drink over crushed ice in wide-brimmed wine glasses, ensuring each drink has some fruit.
  4. Add the desired amount of crème de cassis to each drink. One tablespoon will create a pale plum color, while an ounce will result in a deeper purple hue.
  5. Garnish each drink with a sprig of fresh herb, such as lavender or spearmint.
