Ingredients

  • 1 large egg (separated into yolk and white)
  • 2 tablespoons granulated sugar
  • 1/3 cup whole milk
  • 2 tablespoons heavy whipping cream
  • 1/4 teaspoon nutmeg (freshly grated)
  • 1/4 teaspoon vanilla extract
  • 1-2 tablespoons bourbon (optional)

Instructions

  1. Separate the egg yolk and place it in a medium mixing bowl.
  2. Add sugar to the egg yolk and whisk vigorously until the mixture becomes pale yellow and fluffy. Set aside.
  3. In a saucepan, heat the milk, whipping cream, and nutmeg over medium heat until it begins to steam (but not boil).
  4. Remove from heat.
  5. Spoon a ladle full of the hot milk mixture and whisk it into the egg mixture to temper the eggs. Continue adding hot milk gradually to the egg mixture.
  6. Slowly drizzle the egg mixture back into the saucepan while whisking.
  7. Heat over medium, stirring constantly, until the mixture thickens (do not let it boil).
  8. Remove from heat, stir in vanilla extract and bourbon.
  9. Cover and refrigerate for at least 1 hour before serving with freshly grated nutmeg.
