Ingredients
- 1 large egg (separated into yolk and white)
- 2 tbsp granulated sugar
- 1/3 cup whole milk
- 2 tbsp heavy whipping cream
- a pinch of freshly grated nutmeg
- 1/4 tsp vanilla extract
- 2 tbsp bourbon (optional)
Instructions
- Separate the egg white from the yolk. Place the yolk in a bowl and set the egg white aside.
- Whisk sugar into the egg yolk until the mixture becomes pale yellow and fluffy.
- In a saucepan, heat the milk, whipping cream, and nutmeg until just before boiling.
- Spoon a ladle full of the hot milk mixture into the egg mixture, whisking as you do so to temper the eggs.
- Slowly pour the egg mixture back into the saucepan, stirring constantly.
- Heat over medium, stirring constantly, until the mixture thickens. Do not let it boil.
- Remove from heat, stir in the vanilla extract and bourbon (if using).
- Cover with plastic wrap and refrigerate for at least 1 hour.
- Serve with a sprinkle of freshly grated nutmeg.
