Ingredients

  • 1 large egg (separated into yolk and white)
  • 2 tbsp granulated sugar
  • 1/3 cup whole milk
  • 2 tbsp heavy whipping cream
  • a pinch of freshly grated nutmeg
  • 1/4 tsp vanilla extract
  • 2 tbsp bourbon (optional)

Instructions

  1. Separate the egg white from the yolk. Place the yolk in a bowl and set the egg white aside.
  2. Whisk sugar into the egg yolk until the mixture becomes pale yellow and fluffy.
  3. In a saucepan, heat the milk, whipping cream, and nutmeg until just before boiling.
  4. Spoon a ladle full of the hot milk mixture into the egg mixture, whisking as you do so to temper the eggs.
  5. Slowly pour the egg mixture back into the saucepan, stirring constantly.
  6. Heat over medium, stirring constantly, until the mixture thickens. Do not let it boil.
  7. Remove from heat, stir in the vanilla extract and bourbon (if using).
  8. Cover with plastic wrap and refrigerate for at least 1 hour.
  9. Serve with a sprinkle of freshly grated nutmeg.
