Ingredients
- 3/4 cup whole milk
- 1/4 cup heavy cream
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cinnamon
- pinch of cloves
- 1 large egg yolk (room temperature)
- 2 tablespoons sugar
- 1/4 teaspoon vanilla extract
- whipped cream (optional)
- extra ground cinnamon or nutmeg (optional)
Instructions
- In a medium saucepan over medium/medium-low heat, combine milk, cream, nutmeg, cinnamon, and cloves. Whisk frequently and heat almost to boiling.
- In a large bowl, whisk together egg yolk and sugar. Add sugar gradually, whisking thoroughly after each addition.
- Add about 1/3 cup of the hot milk mixture to the egg mixture, whisking thoroughly. Continue adding the hot mixture to the egg, whisking after each addition. Once most of the milk mixture is combined with the egg mixture, return it to the saucepan.
- Cook and whisk constantly until the mixture reaches 160°F. It will thicken slightly and continue to thicken as it cools.
- Remove from heat, stir in the vanilla, and serve with optional whipped cream and a sprinkle of cinnamon or nutmeg.
