Ingredients

  • 1 1/2 cups whole milk
  • 1/16 teaspoon salt
  • 2 large eggs, separated
  • 2 tablespoons sugar, divided
  • 1/2 cup heavy whipping cream
  • 1/16 teaspoon ground nutmeg
  • Bourbon, rum, brandy, amaretto, or other spirits (optional)

Instructions

  1. Heat whole milk, vanilla bean, seeds, and salt in a saucepan until it reaches 190°F, being careful not to let it boil.
  2. Beat egg yolks with 1 tablespoon sugar until pale and ribbonlike.
  3. Slowly pour 1 cup of hot milk mixture into the egg yolk mixture while beating on low speed.
  4. Pour the egg mixture into the pot of hot milk, whisking constantly.
  5. Add heavy cream and cook over medium heat, stirring frequently until the mixture reaches 170°F and thickens enough to coat the back of a spoon.
  6. Remove from heat, discard vanilla bean, and set aside.
  7. In a separate bowl, beat egg whites and remaining sugar until stiff peaks form.
  8. Pour the milk mixture through a fine-mesh sieve into a serving bowl.
  9. Carefully fold beaten egg whites and nutmeg into the milk mixture.
  10. Ladle into cups or mugs, add spirits if desired, and garnish with nutmeg.
