Ingredients
- 1 cup berry flavored sparkling water
- 3 tablespoons neon pink simple syrup made with pitaya (pink dragon fruit)
- 1 tablespoon half & half
- whipped cream (for garnish)
- maraschino cherry (for garnish)
Instructions
- Make the neon pink simple syrup by boiling water and sugar, then simmering with frozen pitaya until thickened.
- Remove from heat, stir in vanilla extract, and strain the pitaya seeds out.
- Refrigerate the neon pink simple syrup until cold.
- When ready to serve, fill a glass with berry sparkling water.
- Stir in the simple syrup and drizzle in half & half.
- Garnish with whipped cream and a cherry.
