Ingredients

  • 1 cup berry flavored sparkling water
  • 3 tablespoons neon pink simple syrup made with pitaya (pink dragon fruit)
  • 1 tablespoon half & half
  • whipped cream (for garnish)
  • maraschino cherry (for garnish)

Instructions

  1. Make the neon pink simple syrup by boiling water and sugar, then simmering with frozen pitaya until thickened.
  2. Remove from heat, stir in vanilla extract, and strain the pitaya seeds out.
  3. Refrigerate the neon pink simple syrup until cold.
  4. When ready to serve, fill a glass with berry sparkling water.
  5. Stir in the simple syrup and drizzle in half & half.
  6. Garnish with whipped cream and a cherry.
