Ingredients

  • 1/4 ounce absinthe
  • 2 ounces pear brandy
  • 3/4 ounce freshly squeezed lime juice
  • 3/4 ounce rich simple syrup
  • 1 egg white
  • Garnish: freshly grated nutmeg
  • Garnish: 3 dashes Peychaud's bitters

Instructions

  1. Pour absinthe into a chilled coupe glass, swirl to coat, and set aside.
  2. In a shaker, combine pear brandy, lime juice, simple syrup, and egg white. Vigorously dry-shake to emulsify the egg whites.
  3. Fill the shaker with ice and shake until well-chilled.
  4. Double-strain the mixture into the prepared glass.
  5. Garnish with freshly grated nutmeg and 3 dashes of Peychaud's bitters.
