Ingredients
- 1/4 ounce absinthe
- 2 ounces pear brandy
- 3/4 ounce freshly squeezed lime juice
- 3/4 ounce rich simple syrup
- 1 egg white
- Garnish: freshly grated nutmeg
- Garnish: 3 dashes Peychaud's bitters
Instructions
- Pour absinthe into a chilled coupe glass, swirl to coat, and set aside.
- In a shaker, combine pear brandy, lime juice, simple syrup, and egg white. Vigorously dry-shake to emulsify the egg whites.
- Fill the shaker with ice and shake until well-chilled.
- Double-strain the mixture into the prepared glass.
- Garnish with freshly grated nutmeg and 3 dashes of Peychaud's bitters.
