Ingredients

  • 2 to 3 sprigs fresh rosemary
  • 1 cup sugar
  • 1 cup water
  • 1 oz Rosemary Simple Syrup
  • 2 oz whiskey
  • 3/4 oz lemon juice
  • 3/4 oz pineapple juice
  • 6 to 8 fresh mint leaves
  • Rosemary sprig for garnish

Instructions

  1. In a small saucepan, combine the rosemary, sugar, and water for the simple syrup. Boil over medium-high heat until the sugar is completely dissolved.
  2. Remove from heat and let the mixture steep for 30 minutes. Then, remove the rosemary sprigs and refrigerate the simple syrup in an airtight container.
  3. To make the cocktail, add the rosemary simple syrup and mint leaves to a shaker and muddle.
  4. Fill the shaker with ice, then pour in the whiskey, lemon juice, and pineapple juice. Shake for 10 to 15 seconds.
  5. Strain the mixture into a rocks glass filled with crushed ice. Garnish with a sprig of rosemary and serve.
