Ingredients
- 1 egg yolk
- 3/8 cup heavy cream
- 5/16 cup milk
- 2 tablespoons sugar
- 3 tablespoons canned pumpkin
- 1/4 teaspoon vanilla
- 1/4 teaspoon pumpkin pie spice
- Freshly grated nutmeg
Instructions
- In a saucepan, combine egg yolk, 1/8 cup cream, 1/8 cup milk, and sugar. Cook and stir over medium heat for about 5 minutes, until the mixture just coats a spoon; avoid boiling.
- Pour the mixture through a fine mesh sieve into a glass pitcher. Stir in the remaining 1/4 cup cream, 3/16 cup milk, pumpkin, vanilla, and pumpkin pie spice.
- Place the pitcher in a large bowl of ice water and stir for 2 minutes. Cover and chill the mixture for 4 to 24 hours.
