Ingredients

  • 1/4 cup fresh raspberries
  • 2 tbsp sugar
  • 2 tbsp water
  • 3/4 cup brewed black iced tea, cooled
  • 1 tbsp fresh lemon juice
  • 1/2 oz dark rum
  • 1/2 oz light rum
  • Mint leaves to garnish

Instructions

  1. In a small saucepan, combine raspberries, water, and sugar.
  2. Heat over high heat until boiling, stirring to dissolve sugar.
  3. Reduce heat and simmer for about 10 minutes until the syrup turns a deep red and the raspberries are soft.
  4. Remove from heat and let the syrup cool.
  5. Strain the syrup through a fine-mesh strainer, pressing to extract as much liquid as possible. Discard the raspberries.
  6. In a glass, combine the brewed tea, raspberry syrup, lemon juice, and both rums.
  7. Add ice cubes and stir for about 30 seconds.
  8. Garnish with mint leaves and serve.
