Ingredients

  • 1/4 cup water
  • 1/4 cup sugar
  • 2 tbsp dried hibiscus flowers
  • 1 1/2 oz simple syrup
  • 2 oz Koloa Kauai Spice Rum
  • 1 1/2 oz White Cranberry Juice
  • 2-3 oz Soda Water
  • 1/2 tbsp lime juice
  • 1 lime, thinly sliced
  • A small handful of mint leaves
  • Cranberries (frozen or fresh, for garnish)
  • Crushed ice

Instructions

  1. In a small saucepan, combine water, sugar, and hibiscus flowers over medium heat. Stir until the sugar dissolves and bring to a boil. Remove from heat and let it cool. Strain the syrup to remove the hibiscus flowers and chill completely.
  2. In a large collins glass, muddle mint leaves with 1 1/2 ounces of hibiscus syrup. Add crushed ice and a slice of lime.
  3. Layer more ice, mint leaves, and lime slices until the glass is full. In a cocktail shaker with ice, combine the spiced rum, white cranberry juice, and lime juice. Shake well and pour over the ice in the glass.
  4. Top the cocktail with soda water and garnish with a lime slice, a sprig of mint, and cranberries. Serve immediately.
