Ingredients
- 1/4 cup water
- 1/4 cup sugar
- 2 tbsp dried hibiscus flowers
- 1 1/2 oz simple syrup
- 2 oz Koloa Kauai Spice Rum
- 1 1/2 oz White Cranberry Juice
- 2-3 oz Soda Water
- 1/2 tbsp lime juice
- 1 lime, thinly sliced
- A small handful of mint leaves
- Cranberries (frozen or fresh, for garnish)
- Crushed ice
Instructions
- In a small saucepan, combine water, sugar, and hibiscus flowers over medium heat. Stir until the sugar dissolves and bring to a boil. Remove from heat and let it cool. Strain the syrup to remove the hibiscus flowers and chill completely.
- In a large collins glass, muddle mint leaves with 1 1/2 ounces of hibiscus syrup. Add crushed ice and a slice of lime.
- Layer more ice, mint leaves, and lime slices until the glass is full. In a cocktail shaker with ice, combine the spiced rum, white cranberry juice, and lime juice. Shake well and pour over the ice in the glass.
- Top the cocktail with soda water and garnish with a lime slice, a sprig of mint, and cranberries. Serve immediately.
