Ingredients

  • 1 oz. fresh ginger - peeled and finely chopped
  • 2 cups water
  • 1/4 cup raw or white sugar
  • 1 1/2 tsp dark brown palm sugar (for a richer color and flavor)
  • Lime wedges
  • Soda water
  • Ice

Instructions

  1. In a small pot, combine chopped ginger and water, then bring to a boil. Let it steep for 30-60 minutes to infuse the ginger flavor.
  2. Strain out the chopped ginger and return the ginger-spiced water to the pot. Add sugar, bring to a boil, then let it cool to create the ginger syrup.
  3. In a glass, mix ginger syrup (to taste) with ice, freshly squeezed lime juice, and soda water.
