Ingredients

  • 2 tbsp water
  • 2 tbsp sugar
  • 2-3 fresh strawberries, quartered
  • 1 sprig fresh thyme
  • 1 1/2 oz pisco
  • 1 1/2 oz Bonal
  • 1 1/2 oz fresh lemon juice
  • 3 oz dry sparkling wine, chilled
  • ice

Instructions

  1. In a small saucepan, combine water, sugar, strawberries, and thyme, and simmer over medium heat, stirring until the sugar is dissolved. Let it simmer for 30 minutes, stirring occasionally. Strain the mixture through a fine-mesh strainer to remove the solids. Let the syrup cool before using. It can be refrigerated for up to 1 week.
  2. In a small lidded pitcher or quart-size Mason jar, combine the Strawberry-Thyme Syrup, pisco, Bonal, and lemon juice. Stir to combine. This punch mix can be used immediately or covered and refrigerated for up to 10 hours. Any extra Strawberry-Thyme Syrup can be served with seltzer for a nonalcoholic drink.
  3. Fill a Collins glass with ice. Add 1 1/2 oz sparkling wine and 1 1/4 oz punch mix to the glass, then stir gently. Serve immediately.
