Sumac Saffron Sparkler

Ingredients
- 15 to 20 saffron strands
- 2 tablespoons sugar
- 3 green cardamom pods, crushed
- 1/4 cup ground sumac
- 1 cup chilled club soda or water
- Ice
Instructions
- Grind the saffron with 2 tablespoons of sugar to a fine powder using a mortar and pestle.
- In a medium saucepan, combine 1 cup of water, sugar, crushed cardamom, and powdered saffron mixture. Bring to a simmer, stirring until the sugar dissolves. Remove from heat and stir in the ground sumac. Cover and let it steep for 30 minutes, then strain the liquid and chill.
- Fill a tall glass with ice.
- In a large pitcher, stir the syrup with the chilled club soda or water.
- Pour 1 cup of the drink into the glass.
- Garnish with a few saffron strands.
- Store any leftovers in the refrigerator for up to 1 week.
