Ingredients

  • 15 to 20 saffron strands
  • 2 tablespoons sugar
  • 3 green cardamom pods, crushed
  • 1/4 cup ground sumac
  • 1 cup chilled club soda or water
  • Ice

Instructions

  1. Grind the saffron with 2 tablespoons of sugar to a fine powder using a mortar and pestle.
  2. In a medium saucepan, combine 1 cup of water, sugar, crushed cardamom, and powdered saffron mixture. Bring to a simmer, stirring until the sugar dissolves. Remove from heat and stir in the ground sumac. Cover and let it steep for 30 minutes, then strain the liquid and chill.
  3. Fill a tall glass with ice.
  4. In a large pitcher, stir the syrup with the chilled club soda or water.
  5. Pour 1 cup of the drink into the glass.
  6. Garnish with a few saffron strands.
  7. Store any leftovers in the refrigerator for up to 1 week.
