Ingredients

  • 5 to 7 saffron strands, plus extra for garnish
  • 2 tablespoons sugar
  • 1/4 teaspoon ground cardamom
  • 1 tablespoon ground sumac
  • 3/4 cup chilled club soda or water
  • Ice

Instructions

  1. Grind the saffron with 2 tablespoons of sugar to a fine powder using a mortar and pestle.
  2. In a small saucepan over medium-high heat, combine 1/4 cup water, sugar, cardamom, and powdered saffron mixture, bringing it to a simmer and stirring until the sugar dissolves.
  3. Remove from heat and stir in the ground sumac. Cover the saucepan with a lid and let it steep for 30 minutes. Strain the liquid through a fine mesh strainer into a bowl and chill before serving.
  4. Fill a tall glass with ice. In a separate pitcher, stir the syrup with the chilled club soda or water. Pour the drink into the glass.
  5. Garnish with a few saffron strands and enjoy!
