Ingredients
- 2 tbsp powdered monkfruit sweetener
- 1/4 cup water
- 1 cup frozen pineapple chunks
- 4 oz pineapple juice
- 2 tbsp coconut cream
- 2 oz light rum
- 6-8 ice cubes
- Garnish: Fresh pineapple slices
Instructions
- In a small skillet, combine powdered monkfruit sweetener and water. Heat and stir until the sweetener completely dissolves, about 3-4 minutes. Remove from heat and let it cool.
- In a blender, combine frozen pineapple, pineapple juice, coconut cream, rum, and 2 tablespoons of the prepared simple syrup. Blend until smooth.
- While blending, gradually add the ice until the desired consistency is reached.
- Taste the mixture and add more simple syrup, if desired. Blend for another 30 seconds to combine.
- Pour into a glass, garnish with fresh pineapple slices, and serve immediately. Enjoy!
