Ingredients

  • 2 tbsp powdered monkfruit sweetener
  • 1/4 cup water
  • 1 cup frozen pineapple chunks
  • 4 oz pineapple juice
  • 2 tbsp coconut cream
  • 2 oz light rum
  • 6-8 ice cubes
  • Garnish: Fresh pineapple slices

Instructions

  1. In a small skillet, combine powdered monkfruit sweetener and water. Heat and stir until the sweetener completely dissolves, about 3-4 minutes. Remove from heat and let it cool.
  2. In a blender, combine frozen pineapple, pineapple juice, coconut cream, rum, and 2 tablespoons of the prepared simple syrup. Blend until smooth.
  3. While blending, gradually add the ice until the desired consistency is reached.
  4. Taste the mixture and add more simple syrup, if desired. Blend for another 30 seconds to combine.
  5. Pour into a glass, garnish with fresh pineapple slices, and serve immediately. Enjoy!
