Ingredients

  • 3/4 cup milk
  • 2 tbsp granulated sugar
  • 1-inch cinnamon stick
  • 1 whole clove
  • 1/8 tsp ground nutmeg
  • 2 tbsp slivered almonds
  • 1/8 tsp vanilla extract
  • 1 large egg yolk, whisked
  • 1-2 oz dark rum (for serving)

Instructions

  1. In a saucepan over medium heat, combine milk, granulated sugar, cinnamon stick, clove, and ground nutmeg. Whisk to combine.
  2. Simmer the mixture, whisking occasionally, and then remove from heat.
  3. Transfer 1/2 cup of the sweetened milk mixture to a bowl and add the slivered almonds. Set aside to cool for 30 minutes.
  4. Discard the cinnamon stick and clove from the milk mixture and strain if necessary.
  5. Blend the soaked almonds with the liquid until smooth, then add the almond milk and vanilla extract to the saucepan. Whisk to combine.
  6. Gradually pour in the whisked egg yolk, whisking constantly until fully incorporated.
  7. Place the saucepan over medium-low heat and cook for 12-15 minutes, whisking occasionally, until the mixture thickens to coat the back of a spoon.
  8. For a warm drink, add 1-2 oz of rum, whisk to combine, and serve in mugs topped with a sprinkle of cinnamon.
  9. For a cold drink, add 1-2 oz of rum, let the mixture cool for 1 hour, then refrigerate until chilled. Serve in cups over ice and sprinkle with cinnamon.
