Ingredients
- 3/4 cup milk
- 2 tbsp granulated sugar
- 1-inch cinnamon stick
- 1 whole clove
- 1/8 tsp ground nutmeg
- 2 tbsp slivered almonds
- 1/8 tsp vanilla extract
- 1 large egg yolk, whisked
- 1-2 oz dark rum (for serving)
Instructions
- In a saucepan over medium heat, combine milk, granulated sugar, cinnamon stick, clove, and ground nutmeg. Whisk to combine.
- Simmer the mixture, whisking occasionally, and then remove from heat.
- Transfer 1/2 cup of the sweetened milk mixture to a bowl and add the slivered almonds. Set aside to cool for 30 minutes.
- Discard the cinnamon stick and clove from the milk mixture and strain if necessary.
- Blend the soaked almonds with the liquid until smooth, then add the almond milk and vanilla extract to the saucepan. Whisk to combine.
- Gradually pour in the whisked egg yolk, whisking constantly until fully incorporated.
- Place the saucepan over medium-low heat and cook for 12-15 minutes, whisking occasionally, until the mixture thickens to coat the back of a spoon.
- For a warm drink, add 1-2 oz of rum, whisk to combine, and serve in mugs topped with a sprinkle of cinnamon.
- For a cold drink, add 1-2 oz of rum, let the mixture cool for 1 hour, then refrigerate until chilled. Serve in cups over ice and sprinkle with cinnamon.
