Ingredients
- 1/5 cup Whole Milk
- 1/10 cup Heavy Whipping Cream
- 1/5 teaspoon Ground Nutmeg
- a pinch of Salt
- 1/5 cup Sugar
- 2 large Egg Yolks
- 2/5 teaspoon Vanilla Extract
Instructions
- Heat the milk, cream, salt, and nutmeg in a saucepan over medium heat, stirring frequently, until just warmed.
- Whisk the sugar and egg yolks together in a small mixing bowl until fully combined.
- Take 2 to 3 scoops of the warmed milk mixture and pour it into the mixing bowl with the egg yolk mixture, stirring constantly.
- Pour the warmed egg yolk mixture into the saucepan, bring to a slow boil, and whisk continuously until the mixture reaches 160°F.
- Remove from the heat, stir in the vanilla extract, and let it cool.
- Pour the mixture through a fine mesh sieve into a pitcher, cover with plastic wrap, and chill in the refrigerator for about 2 hours.
