Ingredients

  • 1/5 cup Whole Milk
  • 1/10 cup Heavy Whipping Cream
  • 1/5 teaspoon Ground Nutmeg
  • a pinch of Salt
  • 1/5 cup Sugar
  • 2 large Egg Yolks
  • 2/5 teaspoon Vanilla Extract

Instructions

  1. Heat the milk, cream, salt, and nutmeg in a saucepan over medium heat, stirring frequently, until just warmed.
  2. Whisk the sugar and egg yolks together in a small mixing bowl until fully combined.
  3. Take 2 to 3 scoops of the warmed milk mixture and pour it into the mixing bowl with the egg yolk mixture, stirring constantly.
  4. Pour the warmed egg yolk mixture into the saucepan, bring to a slow boil, and whisk continuously until the mixture reaches 160°F.
  5. Remove from the heat, stir in the vanilla extract, and let it cool.
  6. Pour the mixture through a fine mesh sieve into a pitcher, cover with plastic wrap, and chill in the refrigerator for about 2 hours.
