Ingredients

  • 2 tbsp Instant coffee
  • 1 - 2 tbsp Sugar (white, brown, or dark brown)
  • 2 tbsp Hot water (not boiling)
  • 1 cup Milk (hot or cold)
  • 1/4 tsp Spices (ground cinnamon, pumpkin spice, gingerbread spice, etc)
  • 2 tbsp Lotus paste (melted)
  • 2 tbsp Caramel sauce (melted)
  • 1 oz Chocolate (dark)
  • 2 tbsp Heavy cream

Instructions

  1. In a tall glass, combine the instant coffee, sugar, and hot water.
  2. Use a hand frother or hand whisk to whip the mixture on high speed until it becomes foamy, which takes about 2 minutes.
  3. For the classic version, top the glass with hot or cold milk, then add generous dollops of the whipped coffee froth on top. You can dust it with cocoa powder, ground cinnamon, or powdered sugar.
  4. To make the Lotus variation, pour the melted Lotus paste into the bottom of the glass, swirl it around, then top the glass with milk and add the whipped coffee froth on top. Garnish with a Lotus biscuit.
  5. For the Caramel version, add the caramel sauce into a glass, swirl the glass, then top it with milk and whipped coffee froth, and drizzle with more caramel.
  6. If you're making the Chocolate variation, dip the rim of the glass in melted dark chocolate, pour the remaining chocolate into the bottom of the glass, top with milk, add the whipped coffee froth, and drizzle with more melted chocolate.
