Ingredients

  • 1 tbsp. butter, softened
  • 3/4 tbsp. packed brown sugar
  • 2 tbsp. vanilla ice cream, softened
  • 1/8 tsp. ground cinnamon
  • 1/2 cup apple cider
  • 1/4 cup rum

Instructions

  1. In a mixing bowl, beat softened butter and brown sugar until smooth and creamy.
  2. Add softened ice cream and ground cinnamon to the butter mixture, and stir until well combined.
  3. Spoon the buttered rum batter into a mason jar or resealable container, then place it in the freezer until mostly hardened, for about 2 hours or until ready to serve.
  4. In a medium saucepan, heat the apple cider until boiling, stirring occasionally.
  5. Remove the apple cider from heat and pour it into a pitcher or an easy-to-serve container.
  6. Place about 2 tablespoons of the prepared buttered rum batter into a mug.
  7. Fill the mug about 1/3 of the way up with rum.
  8. Top the mug with the hot apple cider, and stir before serving.
