Winter Wonderland Eggnog

Ingredients
- 1 cup whole milk
- 3 tbsp heavy cream
- 1 cinnamon stick
- 1/8 tsp ground cinnamon
- 1/8 tsp ground cloves
- 1 star anise
- 1/2 tsp vanilla extract
- 1/8 nutmeg (freshly grated, plus more for topping)
- 2 tbsp sugar
- 1 egg yolk
- 2 tbsp brandy
- 1/2 tbsp dark rum
- Whipped Cream
- 2 tbsp heavy cream
- 1/2 tsp powdered sugar
- 1/8 tsp vanilla extract
Instructions
- In a medium saucepan, combine the milk, cream, vanilla extract, cinnamon stick, ground cinnamon, cloves, star anise, and half of the ground nutmeg. Simmer gently, then remove from heat and let it steep for 30 minutes.
- Reheat the milk mixture, then in a separate bowl, whisk together egg yolk and sugar until thick and pale yellow in color.
- Gradually add a small amount of the warm milk into the egg yolk and sugar mixture while whisking constantly. Repeat this process 3-4 times to temper the eggs.
- Whisk the egg mixture into the remaining milk and cook over medium heat for 4-5 minutes, stirring constantly until the eggnog has barely thickened.
- Remove from heat, whisk in the brandy, rum, and remaining nutmeg. Strain the mixture through a fine mesh strainer into a heatproof container and refrigerate until cold.
- For the whipped cream, whisk cream with powdered sugar and vanilla extract until thick. Top the eggnog with whipped cream and a sprinkle of freshly grated nutmeg.
