Ingredients
- 1/2 cup water
- 1/4 cup raw sugar
- 5 slices of ginger (approximately 1/4 inch thick)
- handful of kaffir lime leaves
- 1 lemongrass stalk (sliced)
- 1 oz syrup
- 1 1/2 oz Havana Club Anejo Especial or your favorite rum
- 1/4 lime (cut into quarters)
- 8 mint leaves
- ice
- sparkling or soda water
- lime wheels, mint sprig, and lemongrass stalk for garnish
Instructions
- In a saucepan over medium-low heat, combine water and raw sugar. Stir until the sugar is dissolved.
- Remove from heat and add the lemongrass, ginger, and kaffir lime leaves. Let it steep for a couple of hours or overnight, then strain.
- In a glass, combine the syrup, lime, and rum, and muddle to release the lime juice.
- Clap the mint leaves in your hand and rub them around the rim of the glass before adding them to the glass.
- Add ice and sparkling water, then stir to mix.
- Garnish with lime wheels, a sprig of mint, and a lemongrass stalk.
